Home Made Baconnaise

I know that combining bacon and mayonnaise is pretty much the best thing ever. If you are going to take some of your time adding bacon to hellman’s, why not take a few minutes and make your own mayo from scratch. It is tastier, and contains nothing that you can’t pronounce.
Ingredients:
- 1 egg yolk (spend the extra $$ on good quality eggs)
- juice of 1/2 lemon
- salt
- pepper
- 150 mill neutral oil (vegetable, conala, etc)
- spoonful of dijon mustard
-1 piece of rendered bacon, drained of fat on a paper towel.
Producedure
1. combine egg yolk, salt, and 1/2 your lemon juice, and mustard in a metal bowl, and whisk (with a large balloon whisk) until you start to see a froth and elements are combined.
2. Very slowly drizzle olive oil in a slow steady stream while whisking. You will create an emulsion as you whisk in the oil.
3. Once all of the oil is combined and your mayo looks like mayo, taste and see if you need to add more lemon juice, or salt, or pepper.
4. Fold in Bacon with a spatula
5. Eat Mayo
